- Prepare the Cake:

- In a large bowl, beat the eggs and granulated sugar until thick and pale, about 5 minutes. Add vanilla extract.
- Sift together the flour, baking powder, and salt. Gently fold the dry ingredients into the egg mixture until just combined.

- In a chilled bowl, beat the heavy cream, powdered sugar, and vanilla extract until stiff peaks form. Gently fold in the mashed bananas.
- Prepare the Caramel Filling:
- In a saucepan over medium heat, combine brown sugar, heavy cream, butter, vanilla extract, and salt. Cook, stirring continuously until the mixture thickens, about 5-7 minutes. Allow to cool slightly.
- Make the Banana Cream Filling:
- Assemble the Roll Cake:
- Carefully unroll the cooled cake. Spread the banana cream filling evenly over the cake, leaving a small border around the edges. Drizzle some of the caramel filling over the banana cream.
