Summer Pasta Salad

INGREDIENTS
FOR THE SALAD:
- 1 16 oz box rotini pasta
- 1 ½ cup chopped salami
- 1 small red bell pepper diced
- ½ of a small orange bell pepper diced
- ½ of a small yellow or green bell pepper diced
- 1 ½ cups diced cucumber
- 1 cup cherry tomatoes halved
- ½ cup sliced black olives
- ½ cup diced red onion
FOR THE DRESSING:

- ½ cup extra virgin olive oil
- ⅓ cup red wine vinegar
- 1 tablespoon italian seasoning
- ½ teaspoon dried oregano
- ½ teaspoon dried parsley
- Salt and pepper to taste
INSTRUCTIONS

Cook pasta according to package directions. Rinse pasta under cool water, drain and set aside in a large bowl to fully cool.

In a small bowl, whisk together the dressing ingredients until well combined. Adjust seasoning with salt and pepper.

Add dressing and remaining ingredients to a large mixing bowl with the cooled pasta and toss well. Chill covered for at least an hour before serving. When ready to serve, stir and enjoy!
