In a small bowl, whisk together the pineapple juice, apple cider vinegar, brown sugar, soy sauce, and minced garlic. Reserve this mixture, it will be your sauce.
Season the pork chops with salt and pepper on both sides.
Heat some olive oil in a large skillet over medium-high heat. Once hot, add the pork chops and cook for about 4-5 minutes on each side, or until golden brown and cooked through. Remove the chops from the pan and place them on a plate.
