Doritos Chicken Casserole
The meat is then used for a variety of recipes all week long. With the meat, I want to whip together a salad, either Cobb or Avocado Chicken Salad, or Buffalo Chicken Wraps for lunch.

If you happen to run out of shredded chicken, though, that's okay. A rotisserie chicken is readily available at most supermarkets.
On the other hand, you may cook and shred the chicken breasts or thighs just before you put the Doritos Chicken Casserole together if you're in the mood and have some raw chicken on hand.
Two cups of cooked and shredded chicken should be on hand prior to preparing this dish. It all comes together fast, so be sure to have everything you need on hand.
