Start with three lbs of boneless skinless chicken breast, pounded flat. I don’t pound my to hard. Their still rather thick. It’s all about your preference.
Add the pounded chicken breasts to a 3 quart bowl or one gallon freezer bag and fill with water.
Add 1/4 cup of brown sugar and 2 Tablespoons of Kosher salt. Refrigerate for at least two hours to allow the meat to brine. I sometimes let mine sit overnight.

In the meantime, make your BBQ sauce so all of the flavors have time to combine.
Grilled BBQ Chicken Breast Recipe Sauce
2 cups BBQ Sauce
1/4 cup brown sugar
3 cloves minced garlic
Juice of 3 limes
1/4 teaspoon black pepper
1/2 teaspoon kosher salt
Mix well and refrigerate for at least two hours to allow flavors to blend.
When your are ready to start cooking, fire up your charcoal grill. We use a chimney starter.
Discard brine liquid and place chicken breasts on hot grill.
Cover generously with BBQ sauce.
Allow to cook about 6 minutes, turn over and cover with more BBQ sauce.
