Easy Old Fashioned Coconut Cream Pie!

INGREDIENTS

FOR THE PIE CRUST

  • 2 1/2 cups flour
  • 1 tsp salt
  • 1 cup of cold butter cut into small cubes
  • 1/4 of a cup ice water

FOR THE COCONUT FILLING

  • 1/3 cup flour
  • 2/3 cup sugar
  • 3 cups of whole milk
  • 1/3 tsp salt
  • 1 cup sweetened fine coconut
  • 3 slightly beaten extra large egg yolks
  • 4 tablespoons of butter
  • 2 tsp vanilla extract

FOR WHIPPED CREAM

  • 1 cup whipping cream
  • 1 tsp vanilla extract
  • 3 Tablespoons confectioners sugar powdered sugar

FOR THE EVEN EASIER METHOD

    • 1 premade pie crust
    • 2 boxes 3.4 oz each instant Coconut Cream pudding mix
    • 2 cups of whole milk
    • 1 cup shredded coconut
    • 1 8 oz tub Cool Whip Free, thawed
    • About 1/2 cup toasted coconut
