  • Preheat the oven to 400 degrees Fahrenheit.
  • Place the vegetables in a sealable bag or bowl. Add the minced garlic, olive oil, salt, and pepper. Toss the ingredients until the vegetables are evenly coated.
  • Transfer the coated vegetables onto a baking sheet lined with parchment paper.
  • Bake the vegetables at 400 degrees Fahrenheit for 10-12 minutes, or until the florets start to brown slightly and the carrots are tender-crisp.
  • Remove the vegetables from the oven. If desired, drizzle the cooked vegetables with lemon juice and sprinkle the lemon zest and grated Parmesan cheese on top.
  • Serve hot and enjoy!

If you prefer to cook with fresh vegetables, use an equal amount of carrots, broccoli, and cauliflower, cut into bite-sized pieces. Follow the same instructions as with frozen vegetables, but reduce the cooking time by 3-5 minutes.
