Spaghetti Pasta Salad

Ingredients

  • 16 ounces spaghetti noodles, broken into pieces
  • 1 cucumber, diced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, thinly sliced
  • 1/2 cup sliced black olives
  • 1/4 cup fresh parsley, chopped
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons Salad Supreme seasoning
  • 3/4 cup Italian dressing (adjust according to taste)
  • Salt and pepper to taste

Instructions

  1. Bring a large pot of salted water to a boil. Add the broken spaghetti noodles to the boiling water and cook according to the package instructions.
  2. Once cooked, drain and rinse under cold water to stop the cooking process, drain well.
  3. To a large bowl, add the cucumber, red bell pepper, green bell pepper, cherry tomatoes, red onion, black olives, chopped parsley, and cooled spaghetti. Toss everything to combine.
  4. To the mixing bowl, add the grated parmesan cheese, salad supreme seasoning, Italian dressing, salt, and pepper. Mix using tongs until thoroughly combined. Taste and adjust the seasoning if needed.
  5. Cover and chill the salad in the refrigerator for at least 1 hour before serving. This allows the flavors to meld together.
  6. Just before serving, give the salad supreme pasta salad a good stir to redistribute the dressing and seasonings.
  7. Serve the spaghetti salad as a refreshing side dish or a light main course. Enjoy!

Notes

 

  • Although spaghetti noodles are the classic choice for this salad, feel free to use any pasta of your choice. Rotini, bowtie, or penne work well with this recipe.
  • Consider adding diced grilled chicken, cubed salami, or chickpeas for added flavor and protein.
  • Feta cheese, or mozzarella balls are excellent choices that can be added to the salad, mix them in at the end.
  • Add a tablespoon of freshly squeezed lemon juice for a zesty twist to the salad. It's best to mix this in just before serving.
