These Sweet Potato Brownies are an easy, healthy way to enjoy the familiar taste of brownies while sticking to a gluten-free diet. Using almond flour and maple syrup to sweeten, this is a great dessert for a party or for an after-dinner treat for the kids.
INGREDIENTS
- 1 cup sweet potato, mashed
- ½ cup butter, melted
- ½ cup pure maple syrup
- 2 eggs
- 1 teaspoon vanilla extract
- 1 cup cocoa powder
- ¾ cup almond flour
- 1 cup semi-sweet chocolate chips
- 1 cup pecans, chopped
INSTRUCTIONS

Preheat the oven to 350 degrees. Grease an 8×8 baking dish with butter or line with parchment paper then set aside.

In a large mixing bowl, whisk together sweet potato, butter, maple syrup, eggs and vanilla extract until well combined.

Slowly mix in the cocoa powder and almond flour. Fold in the chopped pecans and chocolate chips.

Pour the mixture into the baking dish and bake for 25-28 minutes or until a knife comes out of the center clean.
