Sweet Potato Brownies

These Sweet Potato Brownies are an easy, healthy way to enjoy the familiar taste of brownies while sticking to a gluten-free diet. Using almond flour and maple syrup to sweeten, this is a great dessert for a party or for an after-dinner treat for the kids.

INGREDIENTS

  • 1 cup sweet potato, mashed
  • ½ cup butter, melted
  • ½ cup pure maple syrup
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 cup cocoa powder
  • ¾ cup almond flour
  • 1 cup semi-sweet chocolate chips
  • 1 cup pecans, chopped

INSTRUCTIONS

  • Preheat the oven to 350 degrees. Grease an 8×8 baking dish with butter or line with parchment paper then set aside.
  • In a large mixing bowl, whisk together sweet potato, butter, maple syrup, eggs and vanilla extract until well combined.
  • Slowly mix in the cocoa powder and almond flour. Fold in the chopped pecans and chocolate chips.
  • Pour the mixture into the baking dish and bake for 25-28 minutes or until a knife comes out of the center clean.
